All You Need To Know About Corn In Mexican History

The primary grain that is used in Mexico is corn. Corn is also known as maize in other parts of the world, since the word corn can be used for any primary grain. Corn started out as a wild grass. People ate the seed kernels. As they learned better cultivation skills, they crossbred the grasses to create larger seed heads with nutritious kernels. As time passed, these experiments resulted in the cobs of corn we recognize now.

 

Corn was considered to be a gift from the gods by the Aztecs. Corn was part of many of their rituals. Due to this practice, the Spanish conquistadors did not want to try corn immediately. They linked it to the pagan rituals in their minds, and they considered the grain to be unchristian. They called the grain maize from the native word mahiz. This grain was also associated with pellagra, a disease caused by a deficiency of niacin. Corn contains tryptophan, which the body can convert to niacin, but only with the help of other foods. The Europeans eventually accepted corn and exported back to the Old World.

 

Many Mexican recipes use corn as a primary ingredient, like tamales and tortillas. It has been a part of their lives for many generations. A seasonal ritual of sowing the seed, cultivating the plants, and harvesting the grain in the fall has become a part of everyday life for many.

 

Mexican food has enjoyed the benefits of corn since ancient times. Mayan legend has it that people were created from corn meal by the gods. Their entire culture utilized corn in every aspect of daily life. Once corn was grown in Europe, it quickly grew in popularity among the people as a new food source.

 

Corn has played an important role throughout Mexican food history. Kernels were cooked in alkaline water to soften the hulls for removal. Once the kernels had expanded, they were ground into a coarse meal that was used to make breads, soups, and puddings. Corn tortillas became a staple throughout most of Mexico, being eaten at almost every meal. Remnants of corn have been found in archeological digs dating back to 6700 BC. It is interesting that the two main food sources in Mexico, corn and beans, happen to complement each other with their amino acids. They pair up beautifully, providing everything the people needed.

 

Corn gradually spread north to what is now the United States. Native Americans planted corn as a reliable food source. It remained a staple item in Mexico, where many different varieties were grown throughout the country. As ancient versions of corn began to spread throughout the country, small changes occurred that has led to these many varieties of heirloom corn plants.

 

Hominy, the expanded corn kernels that had been soaked in alkaline water, adds a unique chewiness to traditional Mexican dishes. Hominy is also ground into masa, which can then be dried and reground to make a fine flour called masa harina. This flour is used to make tamales and corn tortillas. It can also thicken sauces like mole.

 

There are several types of corn, but dent corn is the one that is grown most in Mexico. In the United States, dent corn is used for animal feed and industrial uses. Sweet corn is the vegetable everyone enjoys eating off the cob in the summer. Popcorn is another variation that appeared.
